St Pauls, Walden Bury, 19-course Wedding for 100

Did you know that this was the childhood home of Queen Elizabeth the Queen mother?


Long avenues lead to temples, statues, lake, and ponds. Flower gardens bloom in spring and summer, with beautiful displays of magnolias, lilies & irises. The surrounding estate, with its arable and livestock farm and its ancient woodland, is a traditional country estate set in the heart of the beautiful Hertfordshire countryside; laid out in the early 18th century, covering about 50 acres.


Again, we had to build a kitchen from scratch in the middle of nowhere. Their menu consisted of 19 fresh handmade courses.


Below is the menu we served at this private event.


6 CANAPES

 

  • Broccoli, red peppers & apple; pinenuts mini glass canapés served with honey dressing (V) 

  • Wild Mushroom Croquetas (V)

  • Spinach & Goat's Cheese Croquetas (V)

  • Salmorejo Shots of refreshing smooth and creamy Chilled Tomato Soup. Served with a skewered

    olive (V)

  • Tiny brie bites with fig jam bed on goat's cheese topped with Spanish fried almonds

  • Fresh cod and raisins mini empanadillas

 

8 STARTERS -

 

  • Selection of Spanish cured meats and cheese, membrillo and artisanal bread sticks

  • Free Range Chicken Croquetas

  • Calamares a la Andaluza - Strips of squid in seasoned flour, with lemon and alioli

  • Spanish-spiced chicken empanada

  • Caprese skewers with balsamic vinegar & basil dressing (V)

  • Ensalada de calabacin fresh courgettes with feta cheese, chilli, crushed almonds, with lemon and olive oil (V)

  • Padron peppers pinxo, Galician deep-fried baby peppers, with sea salt flakes (V)

 

Main course

  • Gluten free pork meatballs cooked in a rich & rustic tomato sauce

  • Gambas Pil Pil King prawns in smoked paprika, garlic & chilli oil

  • Tortilla - fried potatoes & eggs served with Mojo Picon Sauce (grilled red peppers & chilli sauce)

Main (Sides)

  • Patatas bravas

  • Grilled mixed vegetables with our green mojo picon sauce, green peppers, green chilli, garlic and Spanish spices.

 

Desserts

  • Selection of handmade churros, chocolate, white chocolate and caramel sauce and mini shots of

  • Lemon sorbet.

  • Coffee and a selection of tea (Earl Grey tea, English tea and some herbal options)
